"I feel a moral obligation to the Princess to stand up and say 'this is the way we were'," he said.
"I'm still in that corner waving my flag. Who else is? The Royal Family aren't, her ex husband isn't and sadly her children aren't. So I'm stood there, saying 'this is what I feel passionately about. This is the woman I cared for'."
His cynical criticism of Princes William and Harry, who already regard him beneath contempt for previous revelations about their mother, left friends and courtiers furious.
"If Paul Burrell is supposed to be the last man out there defending Diana's memory, then God help us all," said one.
A senior palace source added: "His comments are extremely offensive and couldn't be further from the truth.
"The boys have spoken out about their mother on a number of occasions, most recently when an Italian magazine published extremely distressing photographs of their dying mother earlier this summer.
"Harry also launched a charity in memory of his mother earlier this year called Sentebale which means 'forget me not'.
"The reason the boys don't react every time someone pops up with a book or a dinner service to sell is because they don't want to give people like Paul Burrell the oxygen of publicity.
He was appearing to promote The Way We Were, his new book about life with Diana, or 'the Boss' as he calls her, to be published this week.
It includes a series of claims about Diana's romantic liaisons with, among others, playboy Dodi Fayed and surgeon Hasnat Khan. It also includes several intimate photographs of her private apartment at Kensington Palace.
They were taken by Burrell without permission shortly after her death.
Asked to respond to criticism that he was cashing in on 'The Boss's' memory, Burrell insisted: "I thought rather than people tell stories and tell lies about the Princess, I wanted to tell the truth, tell people how she was, who she was and how she felt.
"(You are) damned if you do, damned if you don't."

In it they spoke of their dismay at Burrell's revelations, saying: "We cannot believe that Paul, who was entrusted with so much, could abuse his position in such a cold and overt betrayal."
Burrell issued a statement defending his comments,
